Million Dollar Mac and Cheese

My signature dish, the one I trot out for major holidays and milestones, is macaroni and cheese casserole. I tweak the recipe a bit by using penne instead of elbow pasta, halving the butter, and including all three suggested cheeses. Blocks of gruyere, pecorino romano, and sharp white cheddar don't come cheap, so all in all it costs about $30 to make. Million Dollar Mac and Cheese has more of a ring to it, so that's what Shawn christened tonight's pan (seen in the photo above).
